Toum

1: Thoroughly blend the garlic until completely smooth.

2: Add the salt to the blended garlic and continue blending until it forms a velvety paste.

3: While the food processor is still running, gradually drizzle in the vegetable oil.

4: Once half of the oil has been added, sprinkle in the citric acid.

5: Continue adding the second half of the oil while blending.

6: If the sauce becomes too thick, slowly add drops of water to thin it out.

7: For extra heat, include half a jalapeño pepper in the blender.
