 Preheat oven to 425 degrees.
In a large sauce pot, sauté the meat with garlic, herbs, and onions until browned.
Add the pasta sauce and allow it to simmer for about an hour before setting it aside.
Boil the lasagna noodles until they are al dente.
In a large mixing bowl, combine ricotta cheese with eggs, garlic, and parsley until well blended.
Fold in the parmesan cheese, half of the provolone, and half of the mozzarella cheese.
Spread a small amount of pasta sauce on the bottom of a deep oven-safe tray.
Begin layering the lasagna by placing a layer of noodles on the bottom of the tray.
Divide the cheese mixture into even portions and spread one portion over the noodles.
Add a layer of sauce, being careful not to add too much.
Repeat this layering process 3 or 4 times.
Top the lasagna with the remaining sauce and sprinkle the remaining mozzarella and provolone cheese over the top.
Cover the lasagna with aluminum foil to prevent the cheese from burning.
Bake on the middle rack of the oven for 50-60 minutes.
Allow the lasagna to rest for 30 minutes before serving.
